Sweet potato toast with avocado & egg.
Ticks all the POWER boxes to give you a nutritious, delicious meal any time of day.
You can cook them as below or put them in the toaster a few times - which is quick and simple.
🥚 Protein: eggs
🥑 Oils & fats: olive oil and avocado 🍠 Wholegrains & starch veg: sweet potato 🥬 Energising veg: avo and of course you can add some more such as spinach leaves
2 large sweet potatoes
1 tbsp. olive oil for cooking Salt and pepper
Pre heat the oven to 180°C/350°F/Gas mark 4. Slice a sweet potato lengthways into slices around 1 cm thick. Sprinkle some salt and pepper and place on a baking tray. Drizzle with olive oil and allow to cook for 30–35 minutes.
Once the sweet potato slices are cooked to your liking, remove from the oven and top with any of the following:
Boiled, fried or poached eggs
Mashed avocado with some finely chopped anchovies
Tuna and olive oil Smoked salmon Parma ham and boiled eggs
Roasted veg and feta
