Sweet potato toast with egg and avocado

Sweet potato toast with avocado & egg.


Ticks all the POWER boxes to give you a nutritious, delicious meal any time of day.


You can cook them as below or put them in the toaster a few times - which is quick and simple.


๐Ÿฅš Protein: eggs

๐Ÿฅ‘ Oils & fats: olive oil and avocado ๐Ÿ  Wholegrains & starch veg: sweet potato ๐Ÿฅฌ Energising veg: avo and of course you can add some more such as spinach leaves



Ingredients:

2 large sweet potatoes

1 tbsp. olive oil for cooking Salt and pepper

Instructions:


Pre heat the oven to 180ยฐC/350ยฐF/Gas mark 4. Slice a sweet potato lengthways into slices around 1 cm thick. Sprinkle some salt and pepper and place on a baking tray. Drizzle with olive oil and allow to cook for 30โ€“35 minutes.

Once the sweet potato slices are cooked to your liking, remove from the oven and top with any of the following:


Boiled, fried or poached eggs

Mashed avocado with some finely chopped anchovies

Tuna and olive oil Smoked salmon Parma ham and boiled eggs

Roasted veg and feta
