Cherry & Almond Balls
















100g dried (unsweetened) cherries soaked in warm (not boiling water) for two hours

200g blanched almonds (or 100 g blanched + 100g ground almonds)

2 tbsp ground flaxseeds

1/2 tsp ground cinnamon

Desiccated coconut (optional)




Drain the cherries and put them into your food processor with all the other ingredients (except desiccated coconut).

Whizz or pulse to combine the ingredients. The mixture should now stick together.

Form into balls (can be easier with damp hands) and then place in the fridge for two hours before eating.

Roll in some desiccated coconut if desired.


Note: You can substitute the cherries for dried cranberries.
