Sweet potato toast

 

 

 

 

 

 

 

 

 

Ingredients

2 large sweet potatoes
1 tbsp. olive oil for cooking Salt and pepper

 

Method

Pre heat the oven to 180°C/350°F/Gas mark 4.
Slice a sweet potato lengthways into slices around 1 cm thick. Sprinkle some salt and pepper and place on a baking tray. Drizzle with olive oil and allow to cook for 30–35 minutes.
Once the sweet potato slices are cooked to your liking, remove from the oven and top with any of the following:

Boiled, fried or poached eggs

Mashed avocado with some finely chopped anchovies

Tuna and olive oil
Smoked salmon
Parma ham and boiled eggs

Roasted veg and feta
